I've been roasting my own beans for a while with good success. Last week I picked up some organic green from Indonesia and after I've roasted them they look quite different. I took them to my usual level of during or just after 2nd crack and the colour is nice. For some reason the beans don't seem to be shiny like other people's roasted beans and my normal roasted beans. They seem like they have a really matte finish on the outer like the oils aren't quite right. Do they need more time to mature? It's been 4 days and when ground the shot seems to pour really fast and tastes terrible.
Can anyone suggest why this would occur?
